Chef Corey, has over 16 years’ experience working in kitchens from his home country of Australia before London and Hong Kong. His knowledge and expertise spans across classic French, modern Australian and Japanese before realising his truest love for the flavours of the Middle East, a love that has been nurtured for more than half his career.
A modern day nomadic chef of sorts with his movements across continents, gathering knowledge of culinary traditions, Chef Corey leads the kitchen at BEDU drawing inspiration from the humbleness of street food and home cooked dishes representing the various regions defining Middle Eastern cuisine. His modern approach pares back complex spice mixes, preferring instead to showcase unapologetically bold flavours and carefully balancing the spicy and sour flavour profiles that traditionally comes with Lebanese, Turkish and Israeli food alongside smoky notes and flavours from the grill.
